Christmas comes but once a year, why not indulge your sweet tooth and try something sinfully spectacular?
Combine the following in a large pot
4 cups packed brown sugar
2 tsp. baking powder
2 tbsp. flour
1 cup light cream
4 tbsp. butter
Pinch of salt
Cook on medium heat till soft ball stage (use candy thermometer).
Remove from heat, add ½ tsp. vanilla and beat with an electric mixer until it starts to become thick and creamy (approx. 3 to 4 min.)
Pour immediately into a greased or parchment paper lined 8x8 inch pan. Once fudge is cool, turn out onto a cutting board, slice into bitesize pieces, wrap and twist each piece in wax paper (great party favour) or store unwrapped candy in a festive tin.
TIP : If fudge is too hard to slice it means you have cooked or beaten it too long. No worries, it will still taste terrific, just make it again and keep the `ruined` fudge as your personal stash!
