Yummy Dip Recipes for Holiday Entertaining

Roasted Sweet Potato & White Bean Dip

2 cups peeled, diced sweet potatoes

2 large cloves garlic, peeled, left whole

2 tbsp olive oil, divided

1 can (19oz/540 ml) no-salt-added white kidney or cannellini beans drained and rinsed

3 tbsp tahini (see Kitchen Whizdom)

3 tbsp freshly squeezed lemon juice

1 tsp pure maple syrup

½ tsp each ground cumin and sea salt

¼ tsp freshly ground black pepper

1/8 tsp cayenne pepper

 

Preheat oven to 425 F

In a small bowl, combine sweet potatoes, garlic cloves and 1 tbsp olive oil. Mix well. Transfer mixture to a small baking pan. Roast, uncovered, in preheated oven for about 20 minutes, until potatoes are tender. Stir occasionally to ensure even roasting. Remove from oven and let cool slightly.  

Add roasted potatoes, garlic, remaining 1 tbsp olive oil and all remaining ingredients to the bowl of a food processor. Pulse on and off until mixture is smooth. Add water if necessary to achieve desired consistency.

Chill at least 3 hours before serving to let flavours develop. Serve with cucumber rounds, bell pepper strips, brown rice crackers or whole grain pita wedges.

Makes about 3 cups dip

Everyone’s Favourite Guacamole Dip

 

3 ripe avocados (pitted and flesh scooped out)

2 fresh limes

1 large tomato

1 large sweet onion

Kosher Salt to taste

Cracked Pepper

Fresh Cilantro (bunch)

 

In a small bowl, mash the avocado with a fork (chunky or smooth) and combine the juice of one lime, set aside. Dice the tomato and onion, add to the bowl and season with salt and pepper. Finely chop at least ¼ cup (more if desired) of cilantro, add to the bowl along with the juice of the second lime. Mix until the dip is well blended.

Cover the dip with plastic wrap and make sure you tuck the wrap directly around the dip. (This and the lime juice will prevent the dip from turning brown) .

For best flavour results make the dip at least 1 hour before serving.

Serve with nacho chips, veggies or your favourite cracker. Will keep in the fridge, if well wrapped, for 1 to 2 days.
